I posted this info on Etsy's forums in response to someone's question about using symbols in titles. While searching for Google's info on that subject, I came across additional info related to title and description length, editorial guidelines for titles and descriptions, and image size. So I thought it would be a good idea to share it here:
Personally, I use dashes in the title and | (the pipe symbol) in descriptions. From Google's Help Pages:
"Google Shopping doesn't allow product listings that use gimmicky or unnecessary punctuation or symbols in title or description, including promotional messages, like the following:
Below are examples of symbols that we don’t allow in product listings:
[NOTE: The characters in the third row, second column are without a space. I just had to add a space because it kept auto-converting it to a smiley. LOL Also, the symbol to the right of that is NOT an asterisk, so, yes, you can use an asterisk to manually create your own bullet points.]
We do allow the following exceptions:

Title Length: "150 -- In most cases, only 70 or fewer characters will be displayed." (Not sure how many Etsy allows)
Description Length: "We recommend that you submit around 500 to 1,000 characters, but you can submit up to 5,000 characters. Descriptions should follow standard grammar rules and end with a punctuation mark."

Image Size: "Per our image size requirements, it's best to include images that are 800x800 pixels or a bit larger; 250x250 pixels minimum for apparel products."

- Asterisks used in the following cases: "5* customer support", "3* delivery service", or used to indicate that "conditions apply."

- Double dashes (--) and ellipses (...)"
